I recently moved back to NY after a year and a half stint in LA. I call it coast hopping. While in LA I worked, hiked, beached and fell in love with the coconut and kale smoothie from Nature Well in Silverlake. And it quickly became an after Griffith tradition. Since moving back to NY I crave it. I tried to convince the juice place near my Brooklyn apartment to put it on their menu. They have yet to, so I decided to take measures into my own hands.
Based on memory and a photo I took of Nature Well’s menu I came up with a close second. And I’m not mad at it.
Coconut and Kale Smoothie
4 leaves of kale, de-stemed and chopped
1 young coconut, water and meat
1 frozen banana, chopped
1 tsp agave
makes 1 large smoothie
First things first get your young coconut out in front of you and grab a large sharp knife.
Shave the outer layer off the top part of the coconut until you reach the brown shell.
Next you’re going to use the butt of your knife to crack into the shell. Holding the knife at a 45 degree angle whack the top of the shell, moving your knife around. You’ll have to do this a number of times until you wear that shell down and it goes pop! It’s a lot of fun.
Once you have an opening in your coconut, pour the coconut water into a glass and set aside.
Now take the butt of your knife and go to town. Give a few good, strong whacks on the top of the shell until you have a large opening and are able to get all that white meat out.
The coconut meat peels away from the shell very easily. Just reach your hand in there and get every last bit. You may need to use a paring knife to get any stubborn brown bits off your meat. Give your coconut meat a rough chop and set aside.
Time to get the blender out. Throw in your chopped and de-stemed kale, chopped frozen banana, coconut meat, agave and water. Blend well until smooth, about 1-2 minutes.
Pour and enjoy!
